Chicken and Broccoli with Garlic Sauce

Do you ever make dinner for one? I know some of us do, and there are recipes for us too! Obviously, it’s easy to multiply this recipe for a quick, easy and satisfying meal. But if you find yourself eating alone then try this recipe. I plan to make it for two later today.

Chicken With Broccoli and Garlic Sauce

1 tsp. olive oil
1/2 tsp. minced garlic
4 oz. boneless, skinless chicken breast (cut into small pieces)
pinch of dried thyme
salt and pepper
1 cup broccoli florets
1/2 cup chicken broth
1 cup brown rice (cooked)
Heat oil in a large skillet over medium-high heat. Add garlic; saute one minute. Season chicken with thyme, salt and pepper; add to skillet. Cook, stirring frequently until browned, about 3 minutes. Add broccoli; cook 1 minute. Add broth, cover and cook 5 minutes. Serve over rice.

By now, it is obvious that I am a little obsessed with WW so I’ll just add that this meal is only 7 points per serving. I’m a happy girl. 🙂
