Tuesdays at the Table: Because I Still Love Cupcakes…

I love cupcakes, and one of the beautiful things about Weight Watchers is that I can still eat them. The trick is just not to go crazy.

I made these adorable little cupcakes which are worth only 2 points each (icing included!) They’re small, but they’re tasty.

Here’s what you need:
Junior Size Ice Cream Cones
Cake Mix
Icing
Decorating bag and tip (of your choice. I like the star tip.)
Each box of cones contains 60 cups. Place each cone flat on a pan, preferably in mini cupcake pans (to stabilize.)
Prepare the cake mix as directed then fill each cup half way (no more than half way.) You’ll have a little mix left over, but no worries…You’ll have more than enough cake to be happy when you’re done. 🙂
Bake the filled cones as directed, but check on them a few minutes early to be sure. Remove from the oven and let them cool completely.
Then add icing to a decorating bag (or just use a spatula) to ice the top of the cake. Use approximately one tbsp. of icing per cupcake. It doesn’t sound like much, but it’s just right for the size of these little cakes.
Once the icing is on the cakes, let them sit for a few hours so the icing has time to stiffen slightly. Then Enjoy!
It’s easy, and they’re so cute…and they taste great too. 🙂

    Thanks for visiting my blog. I wish I had more self control.. that is my biggest problem. I just crave sugar and carbs sooooo much that if I am not eating in a controlled way (i.e. the carb diet) I go nuts. lol Which makes me soo mad at myself.

    It sounds like you are doing wonderfully and very balanced in your eating. Thanks to you I just finished 45 minutes of exercise LOL I have an exercise room and yet.. lol Many a times I walk on by 🙂 I have no excuse at all!
